Apple and Date Crumble
How many of us crave desserts on the regular and at the most awkward of times? Nothing is more disappointing than wanting to tend to that craving but you can’t because it’s either too late, or too cold to step outside to buy ingredients. This Apple and Date Crumble is that ‘rescue’ recipe you can whip up on a whim, or scale up and make a large batch of to take to any gathering. This dish will also impress those critics; you know those people who grew up eating ONLY grandma’s apple pie and crumble, and absolutely NOOO other recipe can stand true? I can confidently argue that this recipe is every bit as satisfying, and dare I say grandma will be more than impressed? Prep time is laughable; only 5 mins!
Recipe yields 8-10 servings
2- 3 apples of your choice ( or you can mix different kinds of apples together)
1 1/2 cup almond flour
1/2 cup coconut flour
1/4 cup flat oats
1/4 cup roughly chopped pecans
4 – 6 pitted dates finely chopped
2 free range eggs
1 tsp sea salt
1/2 tsp freshly ground nutmeg
1 tsp ground cinnamon
juice of one lemon
1/2 cup coconut oil (cooled and in solid form)
3/4 cup honey
1/4 cup water
2 tbl vanilla extract or one vanilla pod
1 tsp grass-fed high quality butter
Preheat oven to 180C. In a large mixing bowl add almond flour, coconut flour, pecans, oats, nutmeg, 1/2 tsp sea salt, 1 TBS vanilla extract or half the vanilla pod and whisk until well incorporated. Using your hands add solid coconut oil to the dry mixture and break apart coconut oil solids in the dry mixture until clumps are formed. Now your crumble is ready. Cover and set it aside for now.
Prepare your oven safe dish by evenly spreading grass-fed butter all over the inside base and sides of your oven safe dish. Set aside when done.
Thinly chop apples and add to a medium mixing bowl, add chopped dates, lemon juice, cinnamon, 1/2 tsp sea salt, 1 TBS vanilla extract, 3/4 cup honey and toss until ingredients are evenly coated.
Start assembling the crumble. Place apple mixture in the base of your oven safe dish, evenly sprinkle crumble on top and place in the oven for 35 – 40 minutes until apples are cooked. Let stand for 5 minutes before serving! Serve with dairy-free vanilla ice-cream and fresh strawberries if you prefer. Give it a go and let me know how it turns out.
